    ½ c
  • salted butter
    5 tbsp
  • egg
    1
  • almond extract
    2 tsp
  • vanilla extract
    1 tsp
  • salt
    ¼ tsp
  • egg + 1 tbsp water

    for egg wash

    1
  • Slivered almonds

    for topping

  • Butter

    for greasing muffin tin

  • Powdered sugar

    optional for dusting

Directions

  1. 1

In a medium bowl, whisk together the sourdough discard and water until combined.

  2. 2

In a large bowl, whisk flour and salt. Add grated cold butter and mix until the flour is coated and resembles coarse crumbs.

  3. 3

Make a well in the center of the flour mixture and pour in the sourdough-water mixture. Stir until a dough forms, then knead by hand until smooth and no dry flour remains.

  4. 4

Wrap the dough in plastic wrap, flatten into a rectangle, and chill in the refrigerator for 30 minutes.

  5. 5

Roll dough out on a floured surface into approximately an 18”x8” rectangle. Perform a book fold by folding the short sides towards the middle then fold in half. Wrap and chill for 30 minutes.

  6. 6

Repeat 2-3 times: roll dough into a 24”x8” rectangle, fold the sides overlapping like a letter, wrap, and chill for 30 minutes between folds.

  7. 7

Roll the dough into a 12”x8” rectangle, fold into thirds with parchment paper layers between folds to prevent sticking. Refrigerate for at least 1 hour.

  8. 8

Preheat oven to 375°F (190°C). Butter a standard 12-cup muffin tin.

  9. 9

In a medium bowl, mix almond flour, sugar, softened butter, egg, almond extract, vanilla extract, and salt until smooth and well combined.

  10. 10

Remove dough from fridge and place on lightly floured parchment paper. Slightly roll out to an even surface.

  11. 11

Evenly spread the almond filling over the rolled dough surface.

  12. 12

Cut the dough lengthwise into 8 equal strips. Roll each strip into a spiral shape resembling a snail.

  13. 13

Insert each rolled strip into the prepared muffin tin cups.

  14. 14

Brush the tops of each cruffin with the egg wash (1 egg + 1 tbsp water). Sprinkle generously with slivered almonds.

  15. 15

Bake at 375°F (190°C) for 30-40 minutes until cruffins are deep golden brown and crispy.

  16. 16

Remove from oven and cool in the tin for 5 minutes. Then gently remove and serve warm, optionally dusted with powdered sugar.

This homemade cruffins recipe elevates your breakfast or dessert game, offering layers of texture and rich flavor in every bite.

What makes these Almond Cruffins truly exceptional is the use of a simple yet effective sourdough rough puff pastry. This special pastry technique, combined with the subtle tang of sourdough discard, creates an unbelievably tender and flaky exterior that shatters beautifully. Inside, you'll discover a luxurious, sweet almond frangipane filling, made with almond flour, butter, and a hint of almond extract, making each bite an absolute dream.

Topped with delicate slivered almonds and baked to a golden perfection, these breakfast pastry delights are designed to impress. They are not just a treat for the taste buds but also a feast for the eyes.

Tips for Perfect Cruffins:

  • Keep Ingredients Cold: For the flakiest sourdough pastry, ensure your butter and water are very cold when making the dough. This is key for those beautiful layers.
  • Don't Overmix Frangipane: Mix the almond frangipane just until combined. Overmixing can make it tough.
  • Customize Your Topping: While slivered almonds are classic, a sprinkle of turbinado sugar adds extra crunch, or a dusting of powdered sugar after baking provides a lovely finish.

Serve these Sourdough Almond Cruffins warm with your morning coffee, as a delightful brunch centerpiece, or as a sophisticated dessert. They're a truly special bake that's worth every moment!
