Ingredients

  • shortening

    1 c
  • molasses
    1 c
  • buttermilk
    1 c
  • eggs
    3
  • all-purpose flour
    4 c
  • baking soda
    1 tsp
  • salt
    1 tsp
  • ginger
    1 tsp
  • cinnamon
    1 tsp
  • nutmeg
    ½ tsp
  • allspice
    ½ tsp
  • apple butter
    2 c
  • Powdered sugar for sprinkling on top

Directions

  1. 1

Combine shortening, sugar, molasses, buttermilk and eggs in a bowl. Mix with mixer. Whisk together flour, baking soda, salt, ginger, cinnamon, nutmeg and allspice in another bowl. Combine the wet and dry ingredients and mix.

  2. 2

I used 10 inch round cake pans (you could use 8 or 9 inch). Spray your pans with cooking spray each time. Spread a layer of batter in your pans. I used a regular kitchen knife and spread it like you are spreading frosting. Spread the batter about an inch thick. You can spread thicker if you want thicker layers.

  3. 3

Bake layers in a preheated 400 degree oven 12 to 15 minutes until centers test done. Let each layer cool on a plate. Next cover each layer with apple butter as you stack them. This makes about 5 layers. If you want more layers double the recipe. You can sprinkle powdered sugar on top of cake.

If you're looking for a cake that tells a story, this Apple Stack Cake is it!What makes this cake so special is its rustic charm and incredible depth of flavor. Unlike typical layer cakes, the Appalachian Apple Stack Cake features several thin, tender cake layers, generously slathered with sweet and tangy apple butter (or rehydrated dried apples). Each bite offers a delightful balance of moist, spiced cake – thanks to warming ginger, cinnamon, nutmeg, and allspice – and the fruity richness of the apple filling. The addition of molasses (or traditional sorghum) and buttermilk gives the cake its signature tenderness and a subtle, complex sweetness that sets it apart.Creating this Appalachian Apple Stack Cake is a labor of love that's truly worth the effort. The individual layers bake up beautifully, and the molasses, often a staple in Appalachian kitchens, imparts a unique depth that pairs perfectly with the fragrant spices. For a truly authentic experience, consider using homemade apple butter, though store-bought works wonderfully too.## Tips for the Perfect Apple Stack Cake- Molasses Magic: Don't skip the molasses (or sorghum!). It's key to the cake's flavor and color.- Apple Filling: Ensure your apple butter is thick enough so it doesn't run out from between the layers. If using dried apples, make sure they are rehydrated and cooked down to a jam-like consistency.- Embrace the Chill: This cake often tastes even better the next day, as the apple filling softens the cake layers further.- Serving Suggestions: A simple dusting of powdered sugar is the traditional finish for this Apple Stack Cake. For an extra touch, serve it alongside a dollop of fresh whipped cream or a scoop of vanilla bean ice cream. It's a dessert that's perfect for family gatherings, holidays, or simply enjoying a taste of heritage.
