Beer-Steamed Mussels with Chorizo | Epicurious
Ingredients
- 1 tablespoon olive oil
- 8 ounces fresh Mexican chorizo
casings removed
- 1 medium white onion
thinly sliced
- 2 garlic cloves
finely chopped, plus 1 sliced in half, optional
- 1 1/4 teaspoons ground cumin
- 1 teaspoon kosher salt
- 1 bottle Mexican beer
such as Pacifico, 12-ounce
- 2 tablespoons unsalted butter
- 2 pounds mussels
scrubbed, debearded
- 1/2 cup coarsely chopped cilantro
- Hot sauce and crusty toasted bread
for serving; optional
- A large Dutch oven or braising pan with a lid
Directions
- 1
Heat oil in Dutch oven over medium. Cook chorizo, onion, chopped garlic, cumin, and salt, stirring frequently to break up chorizo, until onions are softened and chorizo is cooked through, about 10 minutes. Add beer and butter; increase heat to medium-high and bring to a boil. Cook 1 minute to reduce slightly. Add mussels, cover, and cook until mussels open, 5–8 minutes; discard any mussels that do not open.
- 2
Spoon mussels into bowls. Ladle brothy chorizo mixture over. Top with cilantro, then hot sauce, if using. Rub bread with cut side of garlic clove, if using, and serve alongside.

About this Recipe
Craving a vibrant, savory dish that feels gourmet yet comes together with ease? These Beer-Steamed Mussels with Chorizo offer an unforgettable culinary experience, combining the briny freshness of mussels with bold, aromatic flavors.
Why This Dish Works
The magic in this recipe lies in the masterful combination of rich, spicy Mexican chorizo and the effervescent depth of Mexican beer. Sautéing the chorizo first creates a savory base, infusing the olive oil with its distinctive flavor before the aromatic white onion and garlic are added. The earthy cumin ties it all together, creating a complex, craveable broth that perfectly complements the sweet, tender mussels.
What to Expect
Prepare for a feast for the senses. You'll be greeted by the inviting aroma of simmering chorizo, garlic, and beer as the mussels gently steam. Each bite offers tender, succulent mussels bathed in a rich, savory broth with a subtle kick from the chorizo and a hint of spice from the cumin. The melted butter adds a luxurious finish, making the broth irresistibly dippable. This dish delivers a comforting yet sophisticated flavor profile that will transport your taste buds.
Customization & Variations
Feel free to experiment with your favorite Mexican beer; a lager or pilsner would work beautifully to add that signature steamy richness. For those who love an extra kick, a dash more hot sauce can be added to the finished dish. If fresh cilantro isn't your preference, a sprinkle of fresh parsley could offer a milder, herbaceous note instead. You could also try a different type of sausage, though the unique spices of Mexican chorizo are truly special here.
This robust and flavorful dish is perfect for a cozy dinner party or a special weeknight meal. Serve it family-style in a large Dutch oven, ensuring plenty of crusty toasted bread is on hand to soak up every last drop of that incredible broth, and don't forget the hot sauce for a final flourish.
