
Easy One Pan Italian Beef Sausage & Rice Dinner Recipe

Begin by prepping everything. Slice your beef Italian sausage (if using links) or crumble it (if using bulk). Dice your onion and bell peppers, and mince your garlic. Measure out your rice and broth. Having everything ready before you start cooking makes the process much smoother.

Heat a large, deep oven-safe skillet or Dutch oven over medium-high heat. Add a tablespoon of olive oil if your sausage is very lean; otherwise, the sausage fat should be enough. Add the beef Italian sausage and cook, breaking it up with a spoon, until it’s nicely browned and cooked through. This step is crucial for developing flavor. Once cooked, transfer the sausage to a plate, leaving any rendered fat in the pan.

Reduce the heat to medium. Add the diced onion and bell peppers to the pan with the sausage drippings. Sauté for 5-7 minutes, stirring occasionally, until they begin to soften and become fragrant. Next, stir in the minced garlic and tomato paste, cooking for another minute until fragrant, allowing the tomato paste to deepen in color and flavor.

Add the uncooked long-grain rice to the pan with the vegetables. Stir well to coat the rice grains with the drippings and seasonings. Cook for 1-2 minutes, stirring constantly, until the rice grains start to look slightly translucent around the edges. This toasting step helps prevent the rice from getting mushy. Stir in the canned diced tomatoes (undrained), dried Italian seasoning, dried oregano, and red pepper flakes (if using). Season generously with salt and black pepper.

Pour in the chicken or vegetable broth. Bring the mixture to a strong simmer, scraping up any browned bits from the bottom of the pan with your spoon. These bits are full of flavor!

Return the browned beef Italian sausage to the pan, nestling it into the rice and liquid. Stir gently to distribute everything evenly. Once it’s at a gentle simmer, cover the pan tightly with a lid, reduce the heat to low, and cook for 18-20 minutes, or until the liquid has been absorbed and the rice is tender. Resist the urge to lift the lid and stir during this time, as it lets out precious steam needed for cooking the rice evenly.

Once the cooking time is up, turn off the heat but keep the lid on. Let the dish rest, still covered, for 5-10 minutes. This allows the rice to finish steaming and become perfectly fluffy. Finally, remove the lid, gently fluff the rice with a fork, and stir everything together. Serve hot, garnished with fresh parsley and a generous sprinkle of grated Parmesan or Pecorino Romano cheese.
