Melt 2 tablespoons unsalted butter in a large Dutch oven or broiler-safe, deep-sided skillet over medium heat. Add 2 pounds thinly sliced yellow onions and stir to coat in the butter. Meanwhile, toast 2 (1-inch) slices rustic white bread if using, then tear into rough 1-inch pieces. Arrange a rack about 6 inches below the broiling element, and set the oven to broil.

Pour 1/4 cup dry white wine over the caramelized onions, and use a wooden spoon to scrape up the browned bits on the bottom of the pan. Cook for about 1 minute. Stir in 1/4 cup beef broth and cook for 1 minute more.

Remove the pan from the heat. Gently stir in 2 (about 15-ounce) cans drained and rinsed butter beans, 1 1/2 teaspoons kosher salt, 1 teaspoon sherry vinegar, and 1/2 teaspoon black pepper. Taste and season with more kosher salt and pepper as needed.

Top the bean mixture with the bread pieces. Sprinkle with 3 ounces shredded Gruyère cheese. Transfer the pot to the oven and broil until the cheese is browned in spots, 2 to 5 minutes. Garnish with 1 tablespoon chopped parsley.
