Ingredients
- 1 ½ lblean ground beef
- 3 clovefresh garlic
minced
- sea salt and ground pepper
- 1 tbspsmoked paprika
- 1 tbsptaco seasoning
- 2 largesweet potatoes or yams
cubed small
- avocado oil spray
- 1 tbsptaco seasoning
- 4 largetomatoes
diced
- 1poblano or jalapeno pepper
seeded and diced
- 1red onion
diced
- 1 bunchfresh cilantro
- juice and zest of 1 fresh lime
- sea salt and ground pepper

Preheat your oven to 400 degrees f. and line a baking sheet with parchment paper.

Place your cubed sweet potatoes on your prepared sheet pan and toss with the taco seasoning and oil.

Arrange sweet potatoes in a single layer then roast for 25-30 minutes, tossing once halfway.

Make your fresh salsa by placing all of the chopped veggies, lime juice, lime zest, and cilantro in a bowl.

Stir gently to combine and season with sea salt and pepper to taste and set aside.

Meanwhile, heat a large skillet over medium heat.
