Hot Honey Whipped Feta with Pickled Beets

This creamy whipped feta is swirled with hot honey for a spicy-sweet kick and topped with tangy, citrusy pickled beets. Perfect for spreading on a toasted baguette or scooping with your favorite crackers, it's a quick and easy crowd-pleaser with bright, bold flavors.
Ingredients
- 1 15oz jar Diced Pickled Beets
such as Aunt Nellie’s
- 1 medium Orange
juiced and zested
- 1 tsp Mint
finely chopped
- 1 tbsp Basil
finely chopped
- 1 tbsp Finishing Olive Oil
- 1 pinch Flaky Salt
- 1/8 tsp Fresh Cracked Pepper
- 1 8oz block Feta Cheese
drained
- 1/2 cup Greek Yogurt
- 3 tbsp Hot Honey
- 1/2 medium Lemon
juiced
- Toasted Baguette or Crackers for dipping

Add diced pickled beets to a small bowl. Add the zest and juice of one orange, mint, basil, olive oil, flaky salt, and fresh cracked pepper. Stir and let the mixture marinate.

In a blender or food processor, combine feta, Greek yogurt, and hot honey. Blend until smooth and creamy.

Transfer the whipped feta to a shallow serving bowl. Add lemon juice and a pinch of flaky salt to taste and stir.

Strain excess liquid from the pickled beets and place them in the center of the whipped feta.
