Ingredients

  • 500g boneless skinless chicken thighs
  • gochujang
    1 tbsp
  • honey
    1 tbsp
  • light soy sauce
    1 tbsp
  • garlic clove
    1
  • ginger
    1 tsp
  • onion powder
    1 tsp
  • Black pepper
  • sesame oil
    1 tsp
  • light mayo
    2 tbsp
  • gochujang
    1 tsp
  • honey
    1 tsp
  • garlic powder
    ½ tsp
  • rice vinegar
    1 tsp
  • 80g cucumber
  • 60g carrot
  • 40g red onion
  • rice vinegar
    1 tbsp
  • honey
    1 tsp
  • sesame oil
    ½ tsp
  • Fresh coriander
  • salt
    1 pinch
  • sesame seeds
    ½ tsp
  • Flatbread
  • Oil for spraying

Method

    Marinate the chicken with the gochujang, honey, light soy sauce, grated garlic, grated ginger, onion powder, black pepper and sesame oil. Best to leave this in the fridge for at least an hour, or overnight. If you don't have time you can cook it straight away.

    Place into your air fryer and spray with oil. Air fry at 200 degrees celcius for 16-18 minutes, or until cooked through.

    Whilst the chicken cooks, finely slice the cucumber, carrot and red onion. Place into a bowl and add the rice vinegar, sesame oil, honey, chopped coriander, sesame seeds and a pinch of salt. Mix well and set aside.

    Mix all the sauce ingredients together in a bowl until fully combined.

    Once the chicken is cooked, chop it into thin slices. Warm your flatbread then top with the sauce, slaw and chicken. Finish with a little more sauce, chopped coriander and sesame seeds. Then it's ready to serve and enjoy.
