Tips for the Perfect Magic Chicken Dinner
- Don't skimp on the sauce: The lemon pepper sauce is key to that "magic" flavor. Use a good quality brand for the best results.
- Even potato pieces: Ensure your red potatoes are cut into similar-sized pieces (about 1 1/2-in.) so they cook evenly and become perfectly tender.
- Crispy skin: For extra crispy chicken skin, pat the chicken thighs very dry with paper towels before seasoning and adding sauce. This helps achieve that desirable golden-brown finish.
Delicious Variations & Serving Suggestions
Feel free to customize your lemon pepper chicken and veggies! Try adding other quick-cooking vegetables like bell peppers or zucchini during the last 20 minutes of cooking. For a bit of heat, a pinch of red pepper flakes can be added to the sauce. Serve this flavorful dish simply as is, or with a light green salad to round out the meal.
