Mediterranean Stuffed Peppers Recipe
Ingredients
- 4bell peppers
- 2 ccooked brown rice
- 1 ccanned chickpeas
- ½ ccherry tomatoes
- 2 tbspsun-dried tomatoes
- ⅓ cgreen olives
- 2 ozfeta cheese
- 2 tspolive oil
- ½ cred onion
- 1 tspgarlic
- 2 tsporegano
- 1 tspground cumin
- ½ tsppaprika
- ½ tspground allspice
- Kosher salt and fresh ground black pepper
- ½ cflat leaf parsley
- ¼ ctomato sauce
- 2 tbspfresh lemon juice
- Toasted pine nuts for topping
- Additional flat leaf parsley for garnish
Directions
- 1
Preheat your oven to 350°F (175°C). Lightly spray the bottom of a 9×13 inch baking dish with cooking spray for easy cleanup. Arrange the halved and seeded bell peppers cut-side up in the baking dish, ready for stuffing.
- 2
In a large mixing bowl, combine the cooked brown rice, rinsed chickpeas, halved cherry tomatoes, chopped sun-dried tomatoes, chopped green olives, and crumbled feta cheese. Season the mixture with kosher salt and freshly ground black pepper to taste, then set aside.
- 3
Heat a small skillet over medium-high heat and add the olive oil. Once hot, sauté the diced red onion for about 2 minutes until softened. Add the minced garlic along with dried oregano, ground cumin, paprika, and ground allspice, and cook for an additional minute to release the flavors.
- 4
Stir in the tomato sauce and chopped flat leaf parsley into the skillet. Cook the mixture together for about one minute, allowing the herbs and spices to meld with the tomato sauce.
- 5
Pour the aromatic tomato sauce mixture into the bowl with the rice mixture. Add the fresh lemon juice and stir everything thoroughly until all ingredients are well coated and combined. Taste the filling and adjust salt and pepper if needed.
- 6
Spoon the prepared filling evenly into each bell pepper half, pressing gently to fill. Cover the baking dish loosely with aluminum foil to retain moisture and bake in the preheated oven for 40-45 minutes.
- 7
After the initial baking, remove the foil and bake the peppers for an additional 10-15 minutes to allow the tops to brown slightly and the peppers to become tender.
- 8
Remove the stuffed peppers from the oven and, if desired, top with toasted pine nuts and additional chopped parsley. Serve immediately while warm for best flavor and texture.

- Herb Freshness: Don't skip the fresh parsley and lemon juice at the end; they really elevate the flavors.
- Add Greens: Wilted spinach or kale can be easily incorporated into the filling for an extra nutritional boost.
