Ingredients

- ¼ cgranulated sugar
- 5 tbspunsalted butter

- 8 ozsemi-sweet chocolate chips
- ⅓ cwater
- 1 tbspunsweetened cocoa powder
- 1 tbspdark cocoa powder
- 1 tbspgranulated sugar
- ⅛ tspkosher salt
- 1 ½ cheavy whipping cream
whipped stiffly
- 1 tbspvanilla extract
- 2 tsppeppermint extract
- ½ cheavy whipping cream
whipped softly with 2 tablespoons powdered sugar
- 1 sprigfresh mint
Directions
To make the chocolate cookie crust:

Preheat the oven to 350 degrees F and place the chocolate sandwich cookies and sugar in the bowl of the food processor.
