Nectarine Bruschetta with Brie, Lemon Thyme and Honey
Ingredients
- ⅓loaf sourdough baguette
- 150 gdouble cream brie
- 3nectarines
thinly sliced, no pit
- 4 sprigsfresh lemon thyme
or thyme
- local honey
to drizzle
- flaked salt
to sprinkle on
Directions
- 1
In an empty oven, turn on the broiler to HI. Line a baking sheet with parchment paper.
- 2
Depending on how many people you will be serving, this dictates how much of the baguette you will use. I used about 1/3 of the baguette sliced on a diagonal, 1/2" thick.
- 3
Place your sliced bread on a parchment-lined baking sheet. Slice your Brie into 1/4" or thinner slices, and place 1-2 cheese slices on each piece of bread.
- 4
Slice up your Nectarine and place 3-4 thin slices over the brie. Sprinkle on fresh Thyme leaves and place in the oven on the top rack. DO NOT LEAVE YOUR OVEN!
- 5
Once the Brie starts to melt after 2-5 minutes, remove the baking sheet from the oven.
- 6
Transfer to a serving dish.
- 7
Drizzle honey on each piece, sprinkle on the flaked salt, and add extra fresh thyme leaves.
- 8
Serve warm and enjoy!

Prepare for a delightful sensory experience with this Nectarine Bruschetta. You'll first encounter the satisfying crunch of a perfectly toasted sourdough baguette, providing an ideal base. This gives way to the velvety smoothness of the melted double cream brie, which gently embraces the thinly sliced, vibrant nectarines. Each bite offers a harmonious blend of sweet fruit, savory cheese, and a delicate earthy aroma from the fresh lemon thyme. The final flourish of local honey adds a comforting, golden sweetness, beautifully contrasted by a subtle sprinkle of flaky salt that amplifies all the individual components. It's a taste of summer on a platter, light yet satisfying.
Customization & Variations
Feel free to adapt this end-of-summer appetizer to what's fresh and available. If nectarines aren't at their peak, local peaches make an excellent substitute, offering a similar sweet and juicy profile. For the herbs, fresh regular thyme works wonderfully if lemon thyme is hard to find, still providing that earthy aromatic touch.
