- 2 1/2 lb beef chuck roast
- 1 1/2 cup onion
sliced, 1 medium
- 1 1/2 cup fennel
sliced & leaves reserved, large bulb
- 1 Tbsp garlic
minced
- 6 carrots
peeled & chopped 3/4" pieces
- 4 stalks celery
chopped 3/4" pieces
- 8 sprigs fresh thyme
- 2 1/2 cups chicken broth
- 2 tbsp fennel leaves
chopped for garnish
- 3/4 tsp salt
- 1/4 tsp black pepper
