Rotel Pasta Fiesta combines creamy, cheesy Tex-Mex flavors with pasta for a quick, satisfying, and crowd-pleasing dinner!

Ingredients

  • 12 ozpasta (penne or rotini)
  • 1 lbground beef or turkey
  • 1 canrotel diced tomatoes and green chilies (undrained)
  • 1 cupheavy cream
  • 1 cupshredded cheddar cheese
  • 1 tsptaco seasoning
  • ½ tspgarlic powder
  • salt and pepper, to taste
  • fresh cilantro or parsley (optional, for garnish)

Directions

    Cook the Pasta: Boil the pasta in salted water according to package instructions. Drain and set aside.

    Brown the Meat: In a large skillet, cook the ground beef or turkey over medium heat until fully browned. Drain any excess grease.

    Add the Sauce Ingredients: Stir in the Rotel tomatoes, heavy cream, taco seasoning, garlic powder, salt, and pepper. Bring to a simmer and cook for 5 minutes.
