This recipe comes with some chopping, measuring and other prep, but virtually no hands-0n cooking. Just set your 3- or 4-quart slow cooker to low, then add the potatoes, carrots and onions. Next, in a separate bowl, combine the sauerkraut, brown sugar, mustard and caraway seeds, then spoon this mixture over the veggies. Then add the sliced sausage and the broth and let everything cook, still on low and covered, for between eight and nine hours.

About this Recipe
Craving a deeply satisfying and comforting bowl of soup that’s packed with flavor? This Sausage Sauerkraut Soup offers a hearty meal, bringing together savory smoked kielbasa and the bright, tangy notes of sauerkraut in perfect harmony.
The magic in this soup comes from the classic pairing of robust smoked kielbasa with the distinctive, briny notes of well-drained sauerkraut. The thoughtful addition of brown sugar and spicy brown mustard provides a subtle balance of sweet and tangy heat, while aromatic caraway seeds elevate the entire dish, weaving all the rich flavors together into a cohesive, warming experience.
You can anticipate a rich and savory broth, brimming with tender, quartered red potatoes and thinly sliced carrots. Each spoonful delivers a delightful mix of textures—from the firm, smoky sausage slices to the soft, comforting vegetables and the signature bite of sauerkraut. The overall flavor profile is wonderfully robust and satisfying, offering a perfect blend of smoky, savory, and tangy notes that will warm you from the inside out and leave you feeling completely content.
Looking to customize your bowl? Feel free to swap the smoked kielbasa for another favorite smoked sausage, like knackwurst or even a mild bratwurst. For those who enjoy an extra layer of flavor, a pinch more caraway seeds can intensify its aromatic qualities. If you prefer a milder tang, ensure your sauerkraut is thoroughly rinsed before adding it to the soup.
Serve this warming Sausage Sauerkraut Soup as a complete meal on its own, perhaps with a slice of rustic bread to sop up every last drop. It’s an ideal choice for a cozy family dinner, a casual gathering with friends, or any evening when you crave a truly comforting dish.
