Potato Base
• 12 mini round potatoes
• Salt & pepper
• Garlic powder
• Paprika
• Oil spray
Egg Base
• 8 large eggs
•1 cup cottage cheese
• Salt & pepper to taste
Toppings
• 8 Cooked turkey bacon, chopped
• Diced red bell pepper
• Diced green onion
•1 cup shredded parmesan divided into each egg bite

Ingredients
- 12mini round potatoes
- Salt & pepper
- Garlic powder
- Paprika
- Oil spray
- 8 largeeggs
- 1 ccottage cheese
- 8Cooked turkey bacon
- Diced red bell pepper
- Diced green onion
- 1 cparmesan

Boil mini potatoes.

Add the mini boiled potatoes into a muffin pan.

Smash them flat.

Spray with oil spray, then season with salt, pepper, garlic powder, and paprika.

Place in a 425 degree oven until nice and crispy.

In a blender, combine 8 whole eggs and 1 cup of cottage cheese.

Add salt, pepper, and garlic (from transcript; however, using garlic powder from ingredient list as most relevant) to the egg mixture and blend until smooth.
