Street Corn Pasta Salad
Ingredients
- 4 cups pasta
cooked
- 3/4 cup avocado oil mayo
- 2 tbsp plain greek yogurt
- 1 jalapeño
finely diced
- 1/3 cup cilantro
chopped
- 1 cup roasted corn
- 1/3 cup cotija cheese
- 1 lime
juiced
- 2 tsp hot sauce
- 1/2 lime
zest
- 2 garlic cloves
minced
- 1 1/4 tsp chili powder
- 1/4 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- dash of cayenne
Directions

Finely chop jalapeño and cilantro for pasta salad. I like to use the frozen roasted corn from Trader Joe's for this recipe so I just reheat to have ready!

In a small bowl, mix together ingredients for the sauce: mayo, greek yogurt, lime, lime zest, garlic cloves, hot sauce, cumin, chili powder, garlic powder, cayenne and sea salt. Mix to combine.

In a large bowl, add cooked pasta, cilantro, jalapeño, roasted corn and cotija cheese. Pour dressing on top. Mix to combine.

To serve, top with additional cheese and cilantro.
