Stuffed Peppers
Ingredients
- 4 large bell peppers
any color
- 1 lb lean ground beef
at least 80%
- 2 tablespoons chopped onion
- 1 cup cooked rice
- 1 teaspoon salt
- 1 clove garlic
finely chopped
- 1 can Muir Glen™ organic tomato sauce
15 oz
- 3/4 cup shredded mozzarella cheese
3 oz
Directions
- 1
Heat oven to 350°F.
- 2
Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight. In 4-quart Dutch oven, add enough water to cover peppers. Heat to boiling; add peppers. Cook about 2 minutes; drain.
- 3
In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in rice, salt, garlic and 1 cup of the tomato sauce; cook until hot.
- 4
Stuff peppers with beef mixture. Stand peppers upright in ungreased 8-inch square glass baking dish. Pour remaining tomato sauce over peppers.
- 5
Cover tightly with foil. Bake 10 minutes. Uncover and bake about 15 minutes longer or until peppers are tender. Sprinkle with cheese.

This recipe works because it combines familiar, hearty ingredients into a harmonious dish. The savory ground beef and aromatic onion and garlic provide a rich foundation, while the cooked rice adds a delightful texture and helps bind the filling. The tangy tomato sauce and melty mozzarella cheese perfectly complement the sweet, tender bell peppers, creating a balanced and utterly delicious experience.
What you can expect is a dish where sweet bell peppers become tender vessels for a rich, savory filling. Each bite offers a delightful contrast: the slight give of the pepper, the hearty texture of the seasoned beef and rice, and the gooey stretch of melted mozzarella. The tomato sauce ties all the flavors together with a bright, comforting tang, making this a truly well-rounded and satisfying meal.
Feel free to customize this dish to your liking. While the recipe calls for any color bell peppers, you can choose your favorite hues for a vibrant presentation. If you prefer a milder flavor, you could reduce the amount of garlic. For a slightly different cheesy finish, you might experiment with other melty cheeses in place of some of the mozzarella.
Serve these Stuffed Peppers as the star of your dinner. They make a fantastic main course that's substantial enough on its own, perhaps alongside a simple green salad to complete the meal.
