Ingredients

  • block firm to extra-firm tofu

    drained and patted dry

    14 oz
  • lime juice
    2 tbsp
  • chili powder
    2 tsp
  • cumin
    1 tsp
  • garlic

    minced

    2 clove
  • cayenne pepper

    more or less depending on spice tolerance!

    ¼ tsp
  • olive oil
    2 tbsp
  • white rice

    uncooked

    2 c
  • black beans

    drained and rinsed

    1 can
  • corn

    cooked

    2 c
  • salsa and guacamole

    for topping

Directions

    Cook rice according to package directions.

    Meanwhile, prepare the tofu.

    Cut the tofu block into bite-sized pieces.

    In a small bowl whisk together chili powder, cumin, garlic, cayenne pepper, and lime juice.

    Toss tofu chunks in spice mixture.

    Heat olive oil in a large pan over medium-high heat.
