Ingredients
- 1/2 Cup Vegetable Oil
- 1/2 Cup White Sugar
- 2/3 Cup Light Brown Sugar
- 1 Large Egg
- 1 Cup Pumpkin Puree
- 3/4 teaspoon Vanilla
- 2 1/4 Cups Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 Tablespoon Pumpkin Pie Spice

Preheat the oven to 350 degrees.

Place a silpat or parchment paper on each cookie sheet.

Add the oil and sugars to a standing mixer and beat for 2 minutes.

Add the egg and beat for 30 seconds.

Add the pumpkin and vanilla and mix on low, gradually increasing the speed until smooth.

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice.
