Tuna Risotto
Ingredients
- 2 tablespoons olive oil
- 1 1/2 cups Arborio rice
or long-grain white rice
- 2 cloves garlic
minced
- 3/4 cup dry white wine
- 1/4 teaspoon freshly ground black pepper
- 4 cups chicken broth
- 1 tablespoon freshly squeezed lemon juice
- 2 cups shredded fresh spinach
- 1/2 teaspoon grated lemon peel
- 1 can solid white tuna
drained, 12-ounce
- 1 tablespoon unsalted butter
- 3/4 cup grated Parmesan cheese

Heat oil in a large skillet and add rice and garlic. Cook and stir for 2 to 3 minutes until rice is coated with oil and starts to turn a bit golden in spots.

Add wine, pepper, and 1 cup chicken broth to the skillet. Bring to a boil, then reduce heat to medium and cook mixture for 8 to 10 minutes, stirring frequently, until liquid is absorbed.
