About this Recipe
Craving a classic comfort food like meatloaf but short on time? This Air Fryer Meatloaf delivers perfectly juicy results with a sweet and tangy glaze in just 20 minutes, making weeknight dinners effortless.
The air fryer is the secret weapon here, creating an incredibly moist and flavorful meatloaf in a fraction of the time a conventional oven would take. Its circulating hot air cooks quickly and evenly, ensuring your meatloaf is tender on the inside with a beautifully caramelized glaze on top, all without drying out.
You're in for a treat with this air fryer meatloaf. Each slice is wonderfully juicy and moist, a testament to the air fryer's ability to lock in flavors and prevent dryness. It's packed with savory ground beef, aromatic onion and garlic, and a bright hint of fresh parsley. The tangy Parmesan cheese and earthy Italian seasoning add depth and complexity, creating a rich base that’s far from bland. The real highlight is the sweet and tangy glaze, a perfect harmony of ketchup, brown sugar, and apple cider vinegar, which caramelizes beautifully under the air fryer’s heat, adding a vibrant, glossy finish and a delicious counterpoint to the savory meat. It’s a comforting, hearty dish that feels substantial yet surprisingly light thanks to its incredibly quick cooking.
This air fryer meatloaf is wonderfully adaptable. For a different flavor profile, consider swapping the ground beef for ground turkey or chicken, adjusting cook time as needed. If you don't have panko breadcrumbs, regular plain breadcrumbs will work, though panko offers a slightly lighter texture. Feel free to adjust the amount of garlic or onion to your taste, or even add a pinch of red pepper flakes to the glaze for a subtle kick.
This quick and satisfying air fryer meatloaf is perfect for a busy weeknight or a cozy family dinner when you need comfort food fast. Serve it alongside creamy mashed potatoes, steamed green beans, or a crisp garden salad to complete your meal.
