Transform frozen corn into a vibrant, flavorful side with this incredibly easy Blackstone Mexican Street Corn recipe. Perfect for grilling season, it brings a delicious, zesty kick to any meal.
What makes this Blackstone Mexican Street Corn stand out is its effortless preparation, starting with convenient frozen corn and a handful of simple seasonings. The Blackstone griddle delivers a beautiful char and quick cooking, ensuring a dish that’s both speedy and packed with flavor, making it a reliable choice for busy cooks.
You can expect a delightful balance of sweet corn kernels, creamy mayonnaise, tangy lime, and savory cotija cheese, all brightened by fresh cilantro. The optional Tajin adds a signature chili-lime zest that truly elevates the experience with its mild spice and citrus notes. This easy recipe comes together in about 20 minutes from start to finish, making it an ideal companion for a variety of grilled meats.
While fantastic as is, feel free to adjust the ingredients to your liking. If cotija cheese isn't available, crumbled feta or a mild, salty Parmesan can work as a substitute, though the authentic flavor of cotija is truly special. For a spicier kick, you could add a pinch of cayenne pepper, or if you prefer less tang, simply reduce the amount of fresh lime juice.
This Blackstone Mexican Street Corn is designed to be a standout side dish, complementing many different meats like grilled chicken, steak, or pork. Serve it warm directly from the griddle for the best experience, adding a pop of color and taste to your plate.
