Cheesy Taco Rice Skillet Dinner

This cheesy taco rice is an easy one pan weeknight dinner recipe the whole family enjoys! Top it with some freshly made Pico de Gallo and enjoy!

Ingredients

  • 1 lb of ground beef
  • 1/2 tsp salt and pepper
  • 1/4 tsp cayenne
  • 2 tsp chili powder
  • 1 tsp each of cumin

    dried cilantro

  • 1 diced onion
  • 1 TBSP of minced garlic
  • 1 10 oz can of Rotel
  • 1 8 oz can of tomato sauce
  • 1 1/2 cups of beef broth
  • 1 cup of long grain white rice

    uncooked

  • 2 cups of shredded cheddar cheese
  • 4 small tomatoes

    diced

  • 1/2 onion

    diced

  • 1 jalapeño

    diced

  • 1/2 a bunch of cilantro
  • 2 limes

    squeezed

  • Salt and pepper to taste

Directions

    Brown the ground beef in a skillet on medium high heat, add all seasonings, and the onion.

    Let that cook until beef is cooked through and onions have softened.

    Drain any grease from the skillet.

    Add Rotel, tomato sauce, minced garlic, beef broth, and uncooked rice to the skillet.

    Stir well, cover with a lid, and cook on medium low heat for about 15-20 minutes or until rice is cooked.
