  • light or dark brown sugar

  • granulated sugar
    ½ c
  • vegetable oil

    plus more for the pans

    ¾ c
  • eggs
    4 large
  • unsweetened applesauce
    1 c
  • vanilla extract
    2 tsp
  • grated carrots

    about 9 ounces

    3 c
  • chopped pecans or walnuts

    plus more for garnish

    1 c
  • cream cheese frosting

Directions

    Preheat the oven to 350°F. Grease two 9-inch round cake pans and line the bottoms with parchment paper.
