Ingredients

  • 1 roasting chicken

    4 to 5 pound

  • Kosher salt and freshly ground black pepper
  • 2 lemons
  • 1 whole head garlic

    cut in 1/2 crosswise

  • Good olive oil
  • 2 Spanish onions

    peeled and thickly sliced

  • 1/2 cup dry white wine
  • 1/2 cup chicken stock

    preferably homemade

  • 1 tablespoon all-purpose flour

Directions

  1. 1

Preheat the oven to 425 degrees F.

  2. 2

Remove and discard the chicken giblets. Pat the outside dry. Liberally salt and pepper the inside of the chicken. Cut the lemons in quarters, place 2 quarters in the chicken along with the garlic and reserve the rest of the lemons. Brush the outside of the chicken with olive oil and sprinkle the chicken liberally with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the chicken in a small (11 by 14-inch) roasting pan. (If the pan is too large, the onions will burn.) Place the reserved lemons and the sliced onions in a large bowl and toss with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Pour the mixture around the chicken in the pan.

  3. 3

Roast the chicken for about 1 hour and 15 minutes, until the juices run clear when you cut between a leg and a thigh. Remove the chicken to a platter, cover with aluminum foil, and allow to rest for 10 minutes while you prepare the sauce, leaving the lemons and onions in the pan.

  4. 4

Place the pan on top of the stove and turn the heat to medium-high. Add the wine and stir with a wooden spoon to scrape up the brown bits. Add the stock and sprinkle on the flour, stirring constantly for a minute, until the sauce thickens. Add any juices that collect under the chicken. Carve the chicken onto a platter and serve with the lemons, onions, and warm sauce.

About this Recipe

Ready to create a memorable meal that's surprisingly simple yet utterly impressive? This Engagement Roast Chicken, with just 5 minutes of active prep, promises a centerpiece dish perfect for any special occasion or a comforting weeknight feast.

The magic of this recipe lies in its elegant simplicity. By focusing on fundamental, high-quality ingredients—a robust roasting chicken, bright lemons, aromatic garlic, and rich olive oil—you're set to achieve deeply satisfying flavors. The combination of Spanish onions, dry white wine, and chicken stock lays the foundation for an incredible pan sauce that elevates every bite.

Anticipate a truly classic roast chicken experience: a beautifully golden-brown skin, incredibly tender and juicy meat, infused with the zesty brightness of lemon and the mellow sweetness of roasted garlic. As it cooks, your kitchen will fill with an inviting aroma that hints at the deliciousness to come. The natural juices from the chicken, combined with the wine and stock, create a savory pan sauce that’s perfectly balanced and thickened just right with a touch of flour, making it ideal for drizzling over the chicken and any accompanying sides. It's comfort food at its most refined.

While this recipe is perfect as written, it’s also wonderfully adaptable.

  • Aromatics: Experiment with fresh herbs like rosemary or thyme alongside the lemons and garlic for a different aromatic profile.
  • Onions: If Spanish onions aren't on hand, yellow or sweet onions can work beautifully, offering a slightly different sweetness.
  • Sauce Base: For an alcohol-free alternative, simply increase the chicken stock amount, perhaps with a splash of apple cider vinegar for acidity.

This Engagement Roast Chicken is an ideal choice for a celebratory dinner, a special Sunday gathering, or whenever you want to create a truly comforting and impressive meal with minimal fuss. Serve it simply with roasted vegetables, mashed potatoes, or a fresh green salad to let the chicken truly shine.
