About this Recipe
Craving a bowl of rich, comforting potato soup but short on time? This Instant Pot Potato Soup recipe delivers on all fronts, bringing creamy, cheesy indulgence to your table with remarkable speed.
The magic of the Instant Pot truly shines here, transforming humble russet potatoes into perfectly tender chunks in minutes, forming the foundation of this hearty soup. Combined with a generous amount of shredded cheddar, a blend of milk and sour cream, and savory ham, this recipe captures that beloved "baked potato style" flavor profile, all while streamlining your cooking process for an incredibly easy meal.
Prepare yourself for a deeply satisfying experience with every spoonful. You'll enjoy a velvety, thick soup teeming with tender potato pieces and savory cubes of ham. The distinct flavors of garlic and onion powder infuse the rich chicken broth base, complemented by the tangy creaminess of sour cream and the sharp bite of cheddar cheese. It’s a comforting, belly-warming dish that feels both luxurious and delightfully homemade, perfect for a cozy evening.
While the recipe calls for cubed ham, feel free to adapt the protein to your preference. You could easily omit it entirely for a simpler, hearty vegetable soup, or swap it for cooked, crumbled bacon for a smokier note. Experiment with different types of cheese, perhaps a sharp white cheddar or Monterey Jack, to subtly shift the flavor profile.
Serve this Instant Pot Potato Soup piping hot, garnished generously with fresh green onions and an extra sprinkle of shredded cheese for that classic fully loaded baked potato feel. It’s an ideal main course for a family dinner, offering a comforting and satisfying meal that’s both quick to prepare and universally loved.
