Ingredients

  • 1/4 cup extra-virgin olive oil

    plus more for garnish

  • 1 large onion

    medium diced

  • 6 to 8 cloves garlic

    pressed

  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • 1 heaping teaspoon sweet paprika
  • 1 can chopped tomatoes

    14.5-ounce

  • 3 cans chickpeas

    drained and rinsed well, 15-ounce

  • 1 quart vegetable broth or reduced-sodium chicken broth
  • 1 teaspoon sugar
  • Kosher salt
  • Freshly ground black pepper
  • 1 package pre-washed baby spinach

    5-ounce

Directions

  1. 1

Heat olive oil in a large pot over medium-high heat. Add onion and garlic and saute until the onions begin to turn translucent; lower heat if browning starts to occur. Add spices and saute a minute or so. Add tomatoes, chickpeas, broth, and sugar. Season with a couple pinches of salt and 10 grinds fresh pepper. Stir well. Chickpeas should be just covered with liquid. If level is shy, add some water so the chickpeas are just covered.

  2. 2

Bring to a simmer, then lower heat to low and gently simmer for 45 minutes.

  3. 3

Remove soup from heat. Use a potato masher to mash up some of the chickpeas right in the pot. Stir in the spinach and let heat through until wilted, just a couple minutes.

  4. 4

Season again, to taste, with salt and pepper.

  5. 5

Serve soup, drizzled lightly with extra-virgin olive oil, if desired.

This Moroccan Spiced Chickpea Soup shines through its thoughtful blend of aromatic spices and hearty ingredients. The combination of cinnamon, cumin, cayenne pepper, and sweet paprika creates a complex, warming flavor that elevates simple chickpeas into an extraordinary meal. The thoughtful use of canned tomatoes and chickpeas ensures a satisfying depth without extensive effort.

Prepare for a deeply satisfying bowl where tender chickpeas and soft, savory spinach meld with the rich tang of chopped tomatoes. Each spoonful delivers a balanced profile: the earthiness of cumin, the subtle warmth of cinnamon, and a gentle kick from the cayenne pepper, all rounded out by a touch of sugar. It's a nourishing, flavorful experience that feels both exotic and deeply comforting, designed to warm you from the inside out.

Feel free to adjust the spice level to your preference by modifying the cayenne pepper. You can also swap the vegetable broth for reduced-sodium chicken broth, depending on your pantry or dietary preferences. A different type of hearty green, like kale or chard, could also be used in place of spinach if you prefer.
