or favorite short pasta shape
- 1 tbspolive oil
- 1 lbchicken breasts

diced (i prefer red onion in this dish but if i don't have them on hand any onion works
- 3 clovesfresh garlic
minced or pressed
- 1 pintfresh tomatoes
quartered campari or halved cherry or grape tomatoes
- ½ tspred pepper flakes
- 1 tspsalt
- ½ tspblack pepper
- ½ cwhite wine
or additional chicken stock
- 3 cchicken stock
adjust liquid as necessary to create desired sauce consistency
- 5 ozfresh baby spinach
- 5 ¼ ozshallot & chive boursin cheese
- parmesan cheese
for garnish, if desired
