This recipe for scotcharoos will take you down memory lane! These easy no-bake bars are chewy, sweet, and delicious.

Ingredients

  • 1 tablespoon unsalted butter, or as needed
  • 1 1/2 cups peanut butter
  • 1 cup light corn syrup
  • 1 cup white sugar
  • 6 cups crisp rice cereal
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup butterscotch chips

    Generously butter a 9x13-inch baking pan. Set it aside.

    Mix together the peanut butter, corn syrup, and sugar in a large pot. Cook it over medium heat, stirring until the peanut butter melts. Bring the mixture to a boil. Remove it from the heat.

    Stir in the rice cereal until it's well combined. Transfer the mixture to the prepared pan. and pat it down with buttered hands.

    Melt the chocolate chips and butterscotch chips in a medium saucepan over medium-low heat. Stir it until smooth. Spread it over the top of the bars.

    Cool them completely, about 20 minutes, before cutting them into 24 squares.
