Ingredients

  • small yukon gold or russet potatoes

    peeled and quartered or medium-diced if large

    1 lb
  • baking soda
    ½ tsp
  • salt
    2 tsp
  • extra virgin olive oil
    1 tbsp
  • ancho chili powder
    1 tsp
  • paprika
    ½ tsp
  • cayenne powder
    ¼ tsp
  • lime

    juiced

  • cilantro

    minced, plus more for serving

    ¼ c
  • serrano pepper

    trimmed and minced

Directions

Parboil the potatoes:
