  • 1 pound ground beef
  • 1 medium onion

  • 3 cloves garlic

  • 1 packet taco seasoning

  • 1 can red enchilada sauce

  • 1 1/2 cups shredded cheddar cheese

    divided

  • 1 cup shredded Monterey Jack cheese
  • optional toppings: sour cream

    fresh cilantro, pico de gallo, guacamole
