Ingredients

- ½ cdiced onion
- 2 clovesgarlic
minced
- 1 tspdried oregano
- ½ tspred pepper flakes
- 2 tbsptomato paste
- 2cans chickpeas
drained and rinsed
- 3 clow sodium vegetable broth
- ⅓ csundried tomatoes in oil
chopped
- ½juice of lemon
- 1 cfull-fat coconut milk
or 2/3 cup heavy cream
- 2 cfresh spinach
- salt and black pepper to taste
- fresh basil leaves
for garnish

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
