These Weight Watchers Instant Pot BBQ Chicken Bowls are healthy and delicious. =

Ingredients

  • 2 boneless, skinless chicken breasts (boneless skinless )
  • ½ cup sugar free BBQ Sauce
  • ½ cup water
  • 1 tbsp dehydrated onion flake
  • 1 large garlic clove (minced)
  • 12 oz Green Giant frozen zucchini spirals
  • 15 oz black beans (can)
  • 1 cup frozen corn (thawed)
  • 2 oz reduced fat shredded pepper jack cheese
  • 2 scallions

Directions

    Place the chicken breasts in the Instant Pot liner.

    Mix the bbq sauce, water, onion flakes and minced garlic in a bowl and pour over the chicken.

    Lock lid, set vent to sealing, and press manual high pressure for 8 minutes.

    Cook zucchini spirals according to package directions.

    When Instant Pot beeps, let the pressure release naturally for 10 minutes.

    Remove chicken, and slice.

    Place zucchini spirals, black beans, corn, and chicken on a plate or in a bowl.

    Sprinkle with pepper jack cheese and scallions.
