Ingredients
- 1 tablespoon extra virgin olive oil
- 1 medium onion

diced
- 2 celery stalks

- 1 medium zucchini

- 2 cloves garlic

- 2 chipotle peppers in adobo sauce

- 8 cups chicken broth
- 2 tablespoons lime juice
- salt and pepper to taste

- 1/2 cup white rice - long grain
