Leftover prime rib pasta is one of the best ways to use up holiday leftovers. It's creamy, flavorful, and takes very little time to make!

Ingredients

  • ¾ lb leftover roasted prime rib
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon butter
  • 1 cup heavy cream
  • ⅔ lb. penne pasta
  • ½ onion

    finely chopped

  • 2 garlic cloves

    minced

  • ⅔ lb. cremini mushrooms

    sliced

  • 1 cup sun-dried tomatoes

    chopped

  • sea salt and pepper
    to taste
  • fresh parsley
    to taste
  • grated parmesan

    optional

Directions

  1. 1

Heat olive oil in a skillet. Add onion and cook until translucent, then add garlic and cook for another minute. Next, add sliced mushrooms and butter and cook until tender, 5-6 minutes, constantly stirring.

  2. 2

Add heavy cream, lowering the heat. Let it simmer for 5 minutes until the sauce reduces.

  3. 3

Next, mix in sun-dried tomatoes, salt and pepper, and parsley to taste. Stir to incorporate everything, then remove the skillet from the heat.

  4. 4

Slice leftover prime rib into thin slices. In the meantime, cook penne pasta in a large pot of boiling, salted water. Remove pasta from the heat about 2 minutes before the time indicated on the box, so the pasta is slightly underdone. Drain in a colander and immediately add to the skillet with the cream sauce. Finally, add the sliced prime rib and return to the heat, stirring for 1 minute to mix everything together. Serve and enjoy!

About this Recipe

Tired of the same old prime rib sandwich after a holiday feast? This Amazing Leftover Prime Rib Pasta transforms your coveted roast into a rich, creamy, and utterly satisfying meal that feels entirely new. It’s the perfect answer to making your holiday leftovers feel special, without spending hours in the kitchen.

This recipe works wonders because it cleverly repurposes the already flavorful prime rib, allowing its savory notes to infuse a luscious heavy cream sauce. Paired with earthy cremini mushrooms and bright sun-dried tomatoes, this pasta dish is more than just a quick meal—it's a celebration of flavor designed for ease and enjoyment. It effortlessly turns something familiar into a truly gourmet experience.

Expect a deeply comforting and indulgent dish where tender pieces of prime rib meld into a velvety sauce clinging beautifully to every piece of penne. The sautéed onion and garlic lay a fragrant base, while the mushrooms add a delightful earthiness and the sun-dried tomatoes offer a concentrated burst of sweet and tangy flavor. With a sprinkle of fresh parsley and grated Parmesan, you’ll enjoy a hearty, flavorful bowl that’s both elegant and incredibly simple.

Feeling creative? You can easily adjust this recipe to your liking. While penne is excellent, feel free to use other sturdy pasta shapes like rigatoni or farfalle. Experiment with different types of mushrooms if cremini aren't available, or add a dash of red pepper flakes for a subtle kick. If you don't have fresh parsley, dried parsley or chives can offer a different, yet pleasant, herbaceous note. For an extra layer of richness, consider a splash of dry white wine with the onions and garlic before adding the cream.

This creamy prime rib pasta is ideally suited for a cozy weeknight dinner, especially after a big holiday, or a comforting weekend meal. Serve it simply in a large bowl, perhaps with a crusty baguette to soak up every last drop of the decadent sauce.
