Baked Stuffed Jalapeños
Ingredients
- 12jalapeño peppers
see recipe note
- ¼ cminced onion
- ¼ cchopped fresh cilantro
- ¾ ccream cheese
- 1 ½ tspcumin
- 1 tspsalt
- 2 ozjack cheese
cut into 2 1/2-inch long batons
- 12jalapeño peppers
see recipe note
- ¼ cchopped cooked bacon
- ¼ cminced onion
- ½ cshredded jack cheese
plus another 2 ounces of jack cheese cut into 2 1/2-inch long batons
- ¼ cchopped fresh cilantro
- 1 ½ tspcumin
- 1 tspdried oregano
Directions
- 1
Preheat the oven to 375°F.
- 2
Prepare the jalapeños for stuffing: You can either slice the jalapeños in half lengthwise or you can slice off the top one-third (lengthwise) of each jalapeño to make a boat shape out of each pepper. The halved jalapeños will go further (twice as many stuffed peppers), but you can put more filling into the boat-shaped peppers. Your choice. If you choose to make the boats, you can mince the tops and add them to the filling if you want some extra heat, or save them for another recipe. In either case, scrape out all the seeds and ribs from each jalapeño with a spoon (a grapefruit spoon works great).

Mix: Mix together all the filling ingredients except the jack cheese batons.
- 4
Stuff the jalapeños: Pack the filling into the peppers and nestle a baton of jack cheese onto the filling of each one.

Bake: Arrange the peppers on a foil-lined baking sheet and bake at 375°F for 20 to 30 minutes, or until the cheese is bubbly and lightly browned, and the peppers are cooked. Cool for 5 minutes before serving. Did you love the recipe? Let us know with a rating and review!

About this Recipe
Craving that quintessential game day snack or the perfect easy appetizer for your next gathering? These Baked Stuffed Jalapeños deliver big on flavor and are surprisingly simple to prepare, making them an ideal choice for any crowd.
What makes these jalapeños stand out is their ultimate make-ahead convenience, allowing you to assemble them entirely before your guests arrive. The creamy, savory filling combined with crisp bacon creates an irresistible bite that's always a crowd-pleaser, setting them apart from ordinary snacks.
Imagine biting into a tender, slightly spicy jalapeño, its vibrant heat perfectly balanced by a rich, tangy cream cheese blend. Each pepper is generously filled with a seasoned mixture of cream cheese, savory bacon, and aromatic spices like cumin and oregano, further enhanced by melty jack cheese. The texture is a delightful contrast of the softened pepper and the gooey, cheesy interior, making every serving a satisfying experience that caters to both spice lovers and those who enjoy a milder kick. Expect a delightful TexMex flavor profile with every pop-able bite.
Feel free to adjust the spice level by selecting milder peppers for less heat, or by carefully leaving some seeds and membranes in the jalapeños for an extra kick. For a different flavor profile, you could experiment with adding a pinch of garlic powder to the filling. Don't have fresh cilantro? A small amount of dried parsley could work in a pinch for a herbaceous note, though the fresh herb is highly recommended.
These cheesy, bacon-filled jalapeños are the quintessential TexMex-inspired appetizer, ideal for Super Bowl parties, game day festivities, or any casual gathering. Serve them hot from the oven as a stand-alone snack, or alongside other dippable finger foods for an impressive spread.
