Easily adapt this chowder to your taste. While shredded American or cheddar cheese melts beautifully to create that classic creamy texture, feel free to experiment with Monterey Jack for a slightly different flavor profile. You can also vary the type of pre-cooked chicken you use, whether it's leftover roasted chicken or simply boiled chicken breast.
