About this Recipe

Craving the creamy indulgence of Chicken Alfredo without the carb overload? This Chicken Alfredo Spaghetti Squash recipe offers all the flavor you love, made easy for a weeknight meal and guaranteed to become a family favorite.

This recipe ingeniously transforms classic Chicken Alfredo into a lighter, yet equally satisfying, dish by using tender spaghetti squash instead of traditional pasta. The Alfredo sauce achieves its signature creaminess and body through a clever combination of low-sodium chicken stock, softened cream cheese, and plain Greek yogurt, along with a cornstarch slurry for perfect thickening, all while maintaining a rich flavor profile.

You can anticipate a wonderfully comforting dish where the naturally sweet, strand-like texture of spaghetti squash provides a delightful base for a velvety, savory Alfredo sauce. Each forkful delivers tender chicken breast, earthy baby spinach, and a luxurious richness from melted mozzarella and freshly grated parmesan, all seasoned beautifully with dried basil, oregano, and parsley. It's an easy-to-make, full-flavored meal that feels indulgent but without the heaviness, a true ultimate comfort food.

Customization & Variations

  • For a vegetarian option, simply omit the cooked chicken and bacon. You can bulk up the dish with extra baby spinach or other vegetables like sautéed mushrooms.
  • If you prefer a richer flavor, you can increase the amount of freshly grated parmesan cheese or even add a touch more mozzarella.
  • While dried herbs are specified, you can certainly experiment with a mix of fresh herbs for an even brighter flavor.

This dish is perfect for a cozy family dinner or a lighter, yet still decadent, option for entertaining guests. Serve it simply on its own, or with a light green salad to complete the meal.
