Ingredients
- 3 ccooked and shredded chicken
rotisserie chicken works great
- 1packet taco seasoning
or homemade
- 1 candiced tomatoes with green chilies
drained, like rotel
- 1 canblack beans
drained and rinsed
- 1 cancorn
drained
- 1 csour cream
- 1 ½ csalsa
- 2 cshredded cheddar or mexican blend cheese
divided
- 8 smallflour or corn tortillas
torn into pieces
- ½ csliced black olives
optional
- ¼ cgreen onions
chopped, for garnish
- fresh cilantro
chopped, for garnish

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

In a large bowl, combine the shredded chicken, taco seasoning, diced tomatoes with green chilies, black beans, corn, sour cream, salsa, and 1 cup of the shredded cheese. Mix until everything is well combined.

Spread a thin layer of the chicken mixture on the bottom of the prepared baking dish.

Add a layer of torn tortillas over the mixture.
