Brush a sheet pan generously with vegetable oil. Combine the cashews, walnuts, pecans, almonds, 2 tablespoons of vegetable oil, the maple syrup, brown sugar, orange juice, and chipotle powder on the sheet pan. Toss to coat the nuts evenly. Add 2 tablespoons of the rosemary and 2 teaspoons of salt and toss again.
Spread the nuts in one layer. Roast the nuts for 25 minutes, stirring twice with a large metal spatula, until the nuts are glazed and golden brown. Remove from the oven and sprinkle with 2 more teaspoons of salt and the remaining 2 tablespoons of rosemary.
Toss well and set aside at room temperature, stirring occasionally to prevent sticking as they cool. Taste for seasoning. Serve warm or cool completely and store in airtight containers at room temperature.

Looking for that perfect savory-sweet snack to elevate your next gathering or simply treat yourself? These Chipotle and Rosemary Roasted Nuts deliver an irresistible crunch and flavor that's both sophisticated and incredibly satisfying.
This recipe shines by expertly balancing contrasting flavors. The warmth of chipotle powder meets the aromatic freshness of rosemary, all brought together by a subtle sweetness from maple syrup and brown sugar. The result is a beautifully glazed nut mix with a kick that keeps you coming back for more.
Expect a delightful medley of textures and tastes with every handful. Each cashew, walnut, pecan, and almond emerges from the oven coated in a glistening, golden-brown glaze that's both sweet and savory. You'll experience a gentle heat from the chipotle, complemented by the fragrant, piney notes of fresh rosemary, creating a wonderfully complex bite. The nuts will be perfectly crisp, offering a gratifying snap that makes them an ideal accompaniment to cocktails or a luxurious snack on their own.
Customization & Serving
Feel free to adjust the spice to your preference by increasing or decreasing the amount of chipotle powder. Similarly, if you're a big fan of rosemary, you can be generous with the final sprinkle. While the recipe uses a mix of cashews, walnuts, pecans, and almonds, you could easily focus on your favorite or use an equal blend of them. Don't have maple syrup? A touch more brown sugar can work in a pinch for sweetness.
These roasted nuts are a fantastic addition to any cocktail hour, a elegant appetizer, or a thoughtful homemade gift. Serve them warm for an enhanced aroma and flavor, or let them cool completely for a perfectly portable snack. They pair wonderfully with a crisp white wine or a robust craft beer.
