About this Recipe
Craving the creamy, cheesy goodness of Chipotle’s famous queso blanco without leaving your kitchen? This easy copycat recipe brings those authentic flavors right to your home, ready to enjoy in just about 30 minutes.
This recipe works by blending the sharp, distinct flavor of white cheddar cheese with the smooth, meltable qualities of Monterey Jack. The secret to its signature taste comes from a robust aromatic base—fresh yellow onion, spicy poblano and serrano peppers, and pungent garlic—layered with the smoky depth of ground chipotle and earthy cumin. The addition of heavy cream and sour cream, thickened with cornstarch, ensures that perfectly smooth, dippable consistency you love.
What you'll experience is a rich, velvety dip with a nuanced heat that builds pleasantly. You'll taste the bright notes from the fresh peppers and a subtle smokiness from the chipotle, all balanced by the tangy creaminess of the cheeses. It's substantial enough to be a standout appetizer for your next gathering, yet easy enough for a weeknight treat. This recipe yields a generous eight servings, perfect for sharing.
Customization & Variations
Want to tailor the heat? You can easily adjust the amount of serrano pepper or ground chipotle to dial the spice up or down to your preference. For a slightly different flavor profile, consider experimenting with the ratio of sharp white cheddar to Monterey Jack to find your ideal balance of tang and mild creaminess. While designed as a dip, the rich flavor base is quite versatile.
Serve this warm, luscious queso blanco with your favorite tortilla chips, or alongside fajitas, tacos, or burritos for an authentic Tex-Mex experience. It's the ultimate crowd-pleasing appetizer that disappears quickly!
