About this Recipe

Craving a snack that’s packed with authentic, deep flavors? These Cochinita Pibil Nachos bring the vibrant tastes of Yucatán right to your table, combining crispy Tostitos® with a truly special pork preparation.

The heart of this dish is the cochinita pibil itself – tender pork marinated in a rich blend of achiote and bitter orange, infused with fragrant spices like clove, cumin, bay leaf, and Yucatecan oregano. This traditional slow-cooked method, typically in banana leaves, ensures every shred of pork is bursting with an unforgettable, savory, and slightly tangy flavor that elevates ordinary nachos to extraordinary.

Prepare for a delightful contrast of textures and a symphony of Yucatecan flavors. You'll experience the satisfying crunch of Tostitos® nachos providing the perfect base for the succulent, intensely flavored cochinita pibil. Broiled asadero cheese melts beautifully over the top, adding a creamy, savory layer, while the bright, tangy kick of pickled red onions cuts through the richness, providing a refreshing counterpoint. Each bite offers a harmonious blend of savory pork, sharp acidity, and comforting crunch, delivering a truly unique nacho experience. This is a bold, flavorful dish that captures the essence of traditional Mexican cuisine in a fun, shareable format.

While the cochinita pibil itself is a carefully balanced traditional preparation, you can slightly adjust the presentation or accompaniments. For an extra kick, ensure your pickled red onions include Habanero chile as suggested. The recipe highlights the perfect pairing of broiled asadero cheese and pickled red onions to complement the rich pork, so stick with these for the most authentic experience.

These Cochinita Pibil Nachos are perfect for sharing as an appetizer at your next gathering, a festive game day snack, or even a fun, casual weeknight meal. Serve them hot, straight from under the broiler, to enjoy the melted cheese at its best.
