Ingredients

  • 1 cup cottage cheese

    full fat or double cream, 4% – 6% milkfat

  • 1/2 cup chopped strawberries
  • 2 tbsp pure maple syrup
  • 8 graham crackers

    crushed, 2 big sheets, 4 small crackers each

Directions

    Add the cottage cheese, 1/2 the chopped strawberries, and the maple syrup to a food processor or blender.

    Blend until completely smooth.

    Pour the blended cottage cheese into a freezer safe container. Layer with the crushed graham crackers and remaining chopped strawberries. I do cottage cheese mixture, mix-ins, cottage cheese mixture, mix-ins, cottage cheese mixture, and the final mix-ins on top.

    Place the container in the freezer to set.  It will take about 2-4 hours to freeze completely.

    Once frozen, remove the cottage cheese ice cream from the freezer and let sit at room temperature for 10-20 minutes to thaw slightly. I think if you don’t freeze as long / completely you could probably just scoop and serve right away.
