Directions

    Heat a large fry pan with a medium heat and add in 2 tbsp (30 ml) olive oil

    After a couple of minutes, add in the chopped onion and garlic, mix continuously, after 4 minutes and the ingredients are lightly sautéed, turn off the heat

    Add the flour into a large bowl, along with the yellow corn flour and baking powder, whisk together, then make a well in the middle, crack in the egg, and whisk the egg, and then add in the milk, and whisk everything together until you get a smooth batter

    Add the sautéed onions and garlic into the batter, along with the canned corn kernels (drained), grated cheese, chopped chives, and season with salt & pepper, mix together until well mixed

    Heat the same large fry pan with a medium heat, and add in 1/4 cup (60 ml) olive oil

    After a couple of minutes and the oil is nice and hot, start adding in spoonfuls of the batter and gently pushing down on each one, you want all the fritters in a single layer and evenly spaced, so cook in batches to not overcrowd the pan, fry for 4 minutes per side or until golden and crispy, then transfer into a dish with paper towels

    To make the spicy yogurt sauce, add the Greek yogurt into a bowl, along with the grated garlic, hot smoked paprika, lemon juice, olive oil, and season with salt & pepper, whisk together until you get a creamy sauce

    Transfer the spicy yogurt sauce into a serving dish, and decorate the fritters around it, top off with chopped chives, enjoy!
