Frito Corn Salad combines sweet corn, fresh bell peppers, spicy jalapenos and of course crunchy Fritos all in a creamy dressing.  This is the perfect potluck side dish or appetizer dip!

Ingredients

  • corn kernels

    fresh off the cob, or two 12-14 ounce cans of corn, drained

    3 c
  • red bell pepper

    diced ¼-inch

    ½
  • green bell pepper

    diced ¼-inch

    ½
  • red onion

    diced ¼-inch

    ½
  • diced jalapeños

    drained, or 4 oz mild green chiles drained

    4 oz
  • mayonnaise
    ⅝ c
  • chili powder
    2 tsp
  • shredded cheddar cheese
    1 ½ c
  • fritos chips
    5 oz

Directions

    Combine all ingredients except Fritos in a large bowl and mix well.

    Just before serving, stir in Fritos.
