About this Recipe

Craving the vibrant flavors of Mexico right in your own kitchen? Our easy elote (Mexican street corn) recipe transforms simple corn on the cob into an unforgettable, crowd-pleasing side dish that tastes just like your favorite street food. This quick and simple preparation is one of our favorite ways to enjoy sweet corn.

This isn't just corn on the cob; it's an experience. We combine the rich creaminess of mayonnaise with authentic Mexican crema for a perfect base, then layer on smoky chili powder and the distinct salty tang of cotija cheese. The result is a harmonious blend of sweet, savory, and spicy that’s incredibly satisfying, making it stand out from everyday corn preparations.

Prepare for a sensory delight. Each ear of corn, generously coated, offers a delightful chewiness that complements the smooth, tangy dressing. You'll taste the sweet burst of corn, followed by the complex flavors of the creamy sauce, a subtle warmth from the chili powder, and the salty, crumbly texture of cotija. Freshly chopped cilantro adds an herbal lift, while a squeeze of lime brightens every bite, making this a truly irresistible dish that's surprisingly simple to prepare. It's a fantastic way to enjoy one of our favorite vegetables.

Customization & Variations

  • No Mexican crema? Sour cream is a perfect substitute, offering a similar tang and richness.
  • Adjust the chili powder to your preference for more or less heat. A pinch of smoked paprika can add an extra layer of depth.
  • For a touch of freshness, consider adding finely diced red onion or a sprinkle of cayenne pepper for an extra kick.
  • Want to make it vegetarian? This recipe already is!
  • Try swapping the corn on the cob for corn kernels in a bowl for "esquites" (off-the-cob street corn).

Elote is the ultimate companion for any backyard BBQ, summer gathering, or a festive weeknight meal. Serve it alongside tacos, grilled meats, or as a vibrant stand-alone snack, always with extra lime wedges for serving.
