Golden Diner Pancakes
Ingredients
- 2 c all purpose flour
- 1/3 c sugar
heaping
- 1 tsp kosher salt
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/4 c 2% milk
- 1 1/4 c buttermilk
- 1/4 c vegetable oil
- 2 large eggs
- 1 tsp vanilla
- 1/2 c salted butter
1 stick
- 3 tbsp honey
- 3 tbsp maple syrup
- 1/2 tbsp low sodium soy sauce
Directions
- 1
To a mixing bowl add flour, sugar, salt, baking powder and baking soda. Whisk well to combine set aside.
- 2
To a separate bowl add milk, buttermilk, eggs, vegetable oil and eggs. Whisk well.
- 3
Slow add the wet ingredients into the dry ingredient bowl, whisking until most of the lumps are gone. Don't over-whisk.
- 4
Set the batter aside to thicken while you preheat the oven to 375 degrees.
- 5
Preheat an 8" non-stick skillet over low medium heat. Put the dial on the stove right between low and medium. Allow the skillet to preheat for 8 minutes.
- 6
Oil down the pan and wipe out excess oil. You want a light coating but not a pool of oil in the pan.
- 7
Add 2 ladlefuls of batter to the pan. Cook for 8 minutes. There should be gentle bubbles showing, especially around the edge. The edge should look like it's setting up after 8 minutes. If it's cooking faster than that, turn your heat down a bit.
- 8
Add pan to the oven on the top rack for 9 minutes.
- 9
Remove and run a rubber spatula around the edge. The pancake should pop out when you flip the pan over. Store cooked pancakes on a warm plate while you make the rest.
- 10
For the syrup, cook butter over low medium heat until just melted. Add honey, maple syrup and low sodium soy sauce. Whisk until combined. Leave on low heat until you're ready to serve.
- 11
Make a 3 pancake stack, top with a 1/2 tablespoon of butter and pour over the honey butter maple syrup. Serve hot.

About this Recipe
Craving those famously fluffy, melt-in-your-mouth pancakes from a beloved NYC diner, but from the comfort of your own kitchen? This Golden Diner Pancakes recipe brings that viral breakfast experience right to your home, delivering restaurant-quality indulgence without the wait.
The secret to these extraordinary pancakes lies in a brilliant combination of ingredients and an ingenious oven-baking technique. We're talking about a double-leavening system, using both baking powder and baking soda, which react with creamy buttermilk to create an unparalleled rise and an incredibly airy, cloud-like texture. Baking them in the oven not only ensures even cooking and consistent fluffiness but also frees you from the constant flipping, allowing for a more relaxed morning.
Get ready for a truly golden, luxurious breakfast. These oven-baked beauties boast a gorgeous, uniform golden-brown crust, giving way to a remarkably tender and deeply fluffy interior. You’ll experience a delightful interplay of sweet and tangy notes from the batter, perfectly complemented by the rich, unique honey butter maple syrup. This signature syrup, subtly enhanced with a touch of low sodium soy sauce, adds an unexpected layer of savory depth and umami, elevating the classic pancake experience to something truly special and memorable. Each bite is comforting, satisfying, and decidedly sophisticated.
While this recipe delivers perfection as written, you can easily tailor it to your taste. Adjust the sweetness of the pancake batter by slightly reducing or increasing the sugar to your preference. For the decadent honey butter maple syrup, experiment with the ratio of honey to pure maple syrup, or simply omit the soy sauce if you prefer a more traditional, straightforward sweetness. If 2% milk isn't on hand, whole milk can be used for an even richer, creamier batter, contributing to an extra tender crumb.
These impressive Golden Diner Pancakes are tailor-made for a special weekend brunch, a festive holiday breakfast, or any morning you want to transform into an extraordinary culinary event. Serve them generously drizzled with their unique honey butter maple syrup, perhaps alongside a vibrant scattering of fresh seasonal berries, a dusting of powdered sugar, or a dollop of freshly whipped cream for an added touch of indulgence.
