Ingredients

  • 1 canchickpeas (drained and rinsed)
  • 1 canwhite kidney beans (drained and rinsed )
  • 4 ouncessliced salami, turkey, and/or ham (cubed)
  • 2 ouncessliced provolone cheese (cubed)
  • 1bell pepper (diced small)
  • 1 cupcherry or grape tomatoes (quartered)
  • ½red onion (diced small)
  • ½ cuppickled banana peppers (chopped small)
  • ¼ cupolive oil
  • 2 tbspmayonnaise
  • ¼ cupred wine vinegar
  • 1 tbspbanana pepper brine from the jar
  • ½ tbspdijon mustard
  • 2 clovesgarlic (minced)
  • 3 tbspgrated parmesan cheese
  • 2 tspitalian seasoning
  • ½ tspcrushed red pepper flakes (optional)
  • ¾ tspsalt (adjust to taste)
  • black pepper

Directions

    In a small bowl or measuring cup, add all ingredients for the salad dressing. Whisk together until the dressing is combined and smooth. Set aside.

    Add all salad ingredients into a large mixing bowl. Add dressing and mix until everything is well coated and ingredients are evenly distributed. Serve or store for later!
