  • 8 1/2-inch-thick lamb loin chops

    about 2 pounds fatty tips trimmed

  • dried thyme
  • 3 tablespoons extra-virgin olive oil

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons minced parsley
